Healthy, Hearty Waffles (GF)

Waffles

Makes: 6 Hearty Waffles

Time: 15 minutes

Ingredients:

  1. Heaping 1/2 cup Whole Wheat Pastry Flour (whole wheat flour or GF all purpose flour)
  2. 1/2 tsp Salt
  3. 1 1/2 txp Baking Powder
  4. 1/2 cup Wheat Germ (GF try Oat Bran, but use a bit less)
  5. 1 tbsp Local Honey
  6. 2 Cage-Free Eggs
  7. 1 cup Sour Soy Milk, make it sour by putting 1 tbsp of Bragg’s Raw Apple Cider Vinegar in a 1 cup measuring cup and fill to top with milk. Let it set for 5 minutes before adding to mixture
  8. 1/8 cup Olive Oil
  9. Large Spoonful of Organic Peanut Butter

In a medium mixing bowl, whisk all ingredients together and pour onto Waffle Maker

Top with a bit of butter & Fruit, Honey, Agave or Pure Maple Syrup.

I love making these because they are super filling! My mama made them on the farm and with 3 growing boys and a 1 growing girl, she needed recipes that were quick, healthy, and filling. This definitely fits all 3 of those requirements! I’ve found that adding fruit replaces the need for syrup so it’s sweet enough that I don’t need anything extra.
